This coffee comes from La Laja, a farm in Cauca, Colombia, where James Fernandez, an innovative producer, cultivates several coffee varieties with a focus on quality and biodiversity.
James’ five-hectare farm, La Laja, benefits from a diverse ecosystem that promotes both soil health and complex flavour development in the coffees grown there.
This particular selection is James’ sudan rume variety — a rare, low-yielding variety with a reputation for its resilience and dynamic taste profile. This landrace variety was originally discovered in South Sudan's Boma plateau, and is known for its vivid fruit notes, floral highlights, and syrupy sweetness.
At La Laja, coffee cherries are harvested at peak ripeness, then fermented for 48 hours. After fermentation, the coffee is pulped, washed, and dried carefully to be ready for export.
In the cup, this coffee is jammy and complex, with a syrupy texture and a high concentration of flavour. Caramel and butterscotch sweetness are complemented by red grapes, blackberry, and fresh pear.
