This coffee comes to us from Elia Angel Morales’ ‘Finca Buena Vista’ in Chiapas, Mexico for the second consecutive season.
Elia Angel Morales has been growing coffee for over 20 years, and tends to production alongside her husband, Genaro Roblero, and their children.
Elia, her husband Genaro Roblero, and their children manage Finca Buena Vista, a four-hectare farm in the Angel Albino Corzo community.
Around 60% of the farm is planted with typica, an older variety known for excellent cup quality but often replaced in Latin America due to its vulnerability to leaf rust. At Buena Vista, the ripe cherries are harvested, de-pulped, and dry-fermented for 24 hours, then washed and dried on concrete patios for about four days.
This is both our second purchase from Elia and her second year producing specialty-grade coffee. For the past 20 years, her coffee was sold into the conventional market at low prices, but with Caravela’s PECA program, she’s now focusing on quality, improving both revenue and profitability.
We find this coffee exceptionally sweet, balanced, and accessible. Hazelnut praline and brown sugar form the base, with subtle notes of candied orange adding aromatic complexity.
