These last few weeks we've been buying and brewing with all manner of pour-over papers, determined to find a filter to rule them all. After dozens of side-by-side tests, we think we've found it.
Despite what the label says about being engineered for 'Dark Roast' and brewing at 83 degrees celsius, we've found that the Cafec T-83 is a really great match for our coffees and roast style.
Compared to Kinto, Hario, and MoccaMaster papers, the T-83s result in a cleaner, more open and brighter cup profile, all of which is precisely what we're aiming for in our buying and roasting.
Other brands of papers still yield good results, and we'll likely continue to stock them, but we think these filters from Cafec offer a next level representation of our coffee.
