Finca Los Cipreses comes to us from Mynor Edelmiro Lopez’s small farm of the same name, located right up close to the Mexican border in the northern Guatemalan region of Huehuetenango.
Even so, for the first fourteen years Finca Los Cipreses only produced commercial coffee for the commodity market, but with the support of PECA—an education and support program for specialty coffee growers—Mynor has made the subsequent transition to producing higher quality coffee for the specialty market.
Positioned close to the Mexican border, Finca Los Cipreses is a little under four hectares in size. Historically, the property was only used for grazing cattle and horses but on inheriting the farm from his father some sixteen years ago, Mynor transitioned the property to growing coffee, grains, and citrus fruit. Even so, for the first fourteen years Finca Los Cipreses only produced commercial coffee for the commodity market, but with the support of PECA—an education and support program for specialty coffee growers—Mynor has made the subsequent transition to producing higher quality coffee for the specialty market.
After ripe cherries are harvested, the skins are removed from the fruit-covered seeds inside. The seeds are then dry-fermented in concrete tanks for around 24 hours prior to washing, grading, and drying on concrete patios for an average of 12 days.
We’ve been told that Mynor’s focus for next season is to experiment with longer fermentation times, and washing the coffee with a better water source. While using cleaner water is always better, personally, we’re not so fond of overly fermented or affected flavours in coffees, so we’ll be encouraging Mynor to consider processing at least some of the harvest in a more clarity-focused way.
For me, the coffee from Finca Los Cipreses is one of light toffee upfront with subtle but complex fruit notes, underpinned by a warm, pastry-like toasted almond croissant sweetness.
