La Piramide is a washed process coffee from the Cauca region of Colombia, which I just happen to be drinking as I write to you on this cold, wet, and blustery Wednesday morning in Melbourne. This coffee is what we consider to be a ‘selection’ lot. It’s a misnomer of sorts, because all coffees are selections of one type or another.
